2 dozen native rock oysters with Thai-style grill topping
Like most seafood, oysters pair beautifully with Asian flavours. This Thai-style dipping sauce is also makes a brilliant grill topping, with its zing of fresh lime and chilli.
Ingredients: fish sauce, lime juice, chilli, garlic, coriander.
Directions: 1. Shuck your oysters and drain off the brine. Rinse if there is any dirt or grit on the oyster or in the shell. 2. Return oysters to shell and add a teaspoon or two of the sauce, making sure to include a generous amount of the chopped ingredients. 3. Grill for around 2-3 minutes until the sauce is steaming and the edges of the oysters are just starting to curl (don't let sauce boil as the oysters will over-cook very quickly). 4. Remove from grill and top each oyster with half a teaspoon more of the dipping sauce. 5. Serve and eat immediately with plenty of crusty bread to mop up. Note: oyster shells and contents are hot when they come out from under the grill, so take care!
