Shuck is a licensed Seafood Processor with the NSW Food Authority. Every oyster sold by Shuck Oysters is purchased directly from Food Authority-licensed oyster farmers or through Food Authority-licensed third parties. We endeavour to only procure the finest oysters available each week, with the most recent harvest dates available.
On receipt, each oyster is washed, checked and graded by hand before packing to ensure you only receive the best possible quality.
To maintain the health and longevity of your live oyster product, it's important you follow the storage instructions on the letter you receive with your order. Please note that Sydney Rock Oysters and Pacific Oysters have different storage requirements, and shelf lives.
As a general rule, if stored correctly, a live Sydney Rock Oyster will have a shelf life of up to around 14 days from date of harvest, and a Pacific Oyster around 5-6 days.
Harvest dates, species type, harvest estuary, Product Recall Numbers and storage instructions are all required to be provided by law. These can all be found in the accompanying labels or other information.
Shuck's house-made accompaniments such as our dipping sauces are made fresh to order. Ingredients, storage requirements and use-by dates are displayed on the labels.
Our delicious local third-party products such as Almond Road organic sourdough and Nimbin Valley cultured butter are all sourced fresh, and come with their own original labelling regarding ingredients etc.
Purchase and use of shucking knives from Shuck is entirely at your own discretion and risk. We recommend the use of an appropriate protection glove if you are not a skilled opener. An instructional video on how to safely shuck an oyster is available on the home page of our website. Shuck takes no responsibility if you injure yourself in any way while attempting to use a shucking knife purchased from Shuck. Furthermore, we reserve the right to ask you for proof of age (over 18 years) when purchasing a shucking knife from Shuck.

If you are not entirely happy with any aspect of your order in terms of its quality or freshness, or you believe there has been a mistake with your order, please contact us by email at firstname.lastname@example.org within 24 hours of receipt of your order. Please specify the nature of the issue relating your order and which items it pertains to, as well as including any photos if necessary.
We will then contact you normally within 24-hours arrange a suitable refund, replacement or gift card substitution after discussion and agreement with you.
